If increasing the text size does not suffice, try the Zoom function. It will let you zoom in to a small part of the screen using a double-tap gesture.

Heres how you can increase the text size on your Apple Watch
Dynamic Type lets you reduce the text or increase size throughout the whole operating system, consisting of the default apps. If third-party apps support Dynamic Type (and lots of popular apps do), the text size will update there.
